Coconut Ice Lollies & Summer Break
Summer is the main time we eat fruit in our house. Berries - especially those naturally ripened by the sunshine - are full of antioxidants called anthocyanins to keep our memory sharp (much needed by me at the moment) and our immune system strong (brilliant).
Ice cream is equally as popular in our house during the summer but I can't face buying these sugar laden pots we see in the supermarkets.
I make very simple coconut ice lollies which are not only great sources of fat and protein but make use of these lovely summer berries. All you need is an ice lolly mould and a blender.
The recipe is really simple.
In to a blender I put - 1 tin of full fat coconut milk
2 tbsp of protein powder (either a vegetarian one or collagen)
a handful of berries
half a tsp vanilla extract
optional - a date, half a banana, desiccated coconut
Then pour in to the lolly moulds and freeze. So easy.
Just to let you know I will be having a few weeks off over the summer with my family to enjoy the sunshine (hopefully!) and rest.
I will be away 23rd - 27th July & 8th August - 28th August.
